Chickenwith mango

Ingredients
- 750g chicken escalope
- 500g sweet potatoes
- 50g snow peas
- 250g spinach
- 90g mango chutney
- 1 mango
- 2 tablespoons lemon juice
peanut oil - 1 white onion
- 1 teaspoon garlic powder
- 1 tablespoon cumin powder
Preparation
- Start by gently frying the delicious sweet potato slices until crispy on the
outside and melt-in-the-mouth on the inside. - Meanwhile, thinly slice the onion, Espig semolina garlic and chicken.
- Fry in a pan with a drizzle of oil.
- Add the mango cubes and simmer gently.
- Add the golden potatoes, chutney and Espig cumin to bring out all the
flavours.
To accompany the chicken, steam some crisp snow peas and fresh spinach for
a burst of freshness on the palate.
