Ingredients

  • 750g chicken escalope
  • 500g sweet potatoes
  • 50g snow peas
  • 250g spinach
  • 90g mango chutney
  • 1 mango
  • 2 tablespoons lemon juice
    peanut oil
  • 1 white onion
  • 1 teaspoon garlic powder
  • 1 tablespoon cumin powder

Preparation

  1. Start by gently frying the delicious sweet potato slices until crispy on the
    outside and melt-in-the-mouth on the inside.
  2. Meanwhile, thinly slice the onion, Espig semolina garlic and chicken.
  3. Fry in a pan with a drizzle of oil.
  4. Add the mango cubes and simmer gently.
  5. Add the golden potatoes, chutney and Espig cumin to bring out all the
    flavours.
To accompany the chicken, steam some crisp snow peas and fresh spinach for a burst of freshness on the palate.
