Black pepper

The berries are picked just before they turn yellow. They are washed in water, scalded and then air-dried. When they come into contact with air, they oxidise and turn black.

Black pepper retains the vegetal notes of its green stage, but gains in heat and power. It is perfect for spicing up meats and intensifying flavours.

Madagascar wild pepper

Also known as Voatsiperifery pepper, this rare pepper grows wild in the forests of Madagascar. It can be recognised by its brown and reddish berries, no bigger than a pinhead, and its small stems.

Highly aromatic, it has woody and floral notes, with a hint of citrus on the finish.

A subtle accompaniment to meat, poultry, carpaccio, foie gras, fish, seafood, raw or fried vegetables, sweet and sour dishes, sauces and fruit or chocolate desserts.

Sichuan pepper

Originating in the mountains of China, Sichuan berries are characterised by citrus notes and a freshness on the palate that leaves the tongue feeling slightly numb.

They are ideal in sweet and savoury dishes, meat marinades and Asian cuisine, and add a touch of originality to fruit or chocolate desserts.

Brazilian pink berries

On the nose, these berries release fruity, floral vegetal scents. On the palate, they have a crunchy, melt-in-the-mouth texture and sweet, slightly tart flavours. They are fragrant without being pungent. They can be eaten raw or cooked at the end to preserve all their flavours.

They can be used in a wide variety of ways: tartars, carpaccios, gravlax, fish en papillote, foie gras, marinades, sauces, cheese and even fruit desserts.

Pink Himalayan salt

Extracted from salt mines in the Himalayas, at depths of between 400 and 600 metres, this rock salt is considered to be the purest in the world, having been formed millions of years ago. Unlike sea salt, it contains no iodine.

It contains minerals and trace elements, in particular iron oxide, which gives it its beautiful pink colour. Delicate and subtle, it goes well with all everyday dishes.
