Ingredients

  • 4 chicken drumsticks
  • 1 chorizo
  • 1kg mussels
  • 15 prawns
  • 500g paella rice
  • 2 onions
  • 3 cloves of garlic
  • 1kg tomatoes
  • 2 red peppers
  • 50g peas
  • Olive oil
  • Black pepper and salt Espig
  • Spigol®
  • 1 litre chicken stock

Preparation

  1. Clean the moulds thoroughly.
  2. Cut the chorizo into slices.
  3. Chop the peppers. Peel and crush the tomatoes. Peel and chop the onions and garlic.
  4. In a well-oiled paella pan, brown the prawns (then set aside) and chicken drumsticks over a high heat. 
  5. Stir in the onions.
  6. Add the tomatoes, garlic, Spigol, salt and pepper, stirring constantly.
  7. Leave to simmer over a low heat for around 5 minutes, stirring constantly.
  8. Add the rice, chorizo and stock.
  9. Add the prawns, mussels and peas and cook for 30 to 35 minutes.

Just before serving, add a few lemon wedges and parsley leaves.
